In 1819, Pierre de Saint Aubin established a sugar cane plantation in southern Mauritius. The family quickly diversified its production with tea and rum as well as other agricultural products.
The Saint Aubin Coffee Classic is made from a rum distilled in a column still in which vanilla pods have long macerated releasing all their flavors.
