Batavia Arrack is a rum made on the island of Java in Indonesia from cane sugar molasses.

The only difference with other rums is in the use of a little bit of local red rice during the fermentation period before an 8-year aging in oak barrels.

Batavia arrack is usually used for punches and pastry but it is also ideal for cocktails.
