Antigua Distillery Ltd. was founded in 1932 to revive the essentially defunct rum industry in Antigua.   The brand "English Harbour" was born in 1993. The special character of the rum "English Harbour" begins with the fermentation process. They use baker’s yeast during their fermentation, which lasts between 24 and 36 hours, and allow them to interact with the wild yeast present in the distillery. The use of open fermenters helps and promotes the marriage of different yeasts. Sugar cane is no longer grown in Antigua, the molasses used comes from the Dominican Republic and Guyana.   Later, the fermented molasses is distilled in a continuous column-copper still and the aging takes place on the seafront in small American oak barrels.

In Antigua, rums have been produced for almost three hundred and fifty years. Made from a by-product of sugar, the light spirits were created to satisfy a rather demanding clientele of craftsmen, aristocrats and skilled officers in the Royal Navy. No doubt, the requirements of Admirals Rodney, Cochrane, Hood and Nelson will have been used to perfect the "English Harbour" rums. Today, the heritage of rum production has been passed down from generation to generation, resulting in real production and aging. The "English Harbour 5 years" rum has a distinctive sweet flavour that is revered by true connoisseurs as authentic rum.
