Togouchi Premium, the unaged blend of Japanese producers Chugoku Jozo, who mature their whisky in a tunnel rather than a warehouse, is the result of blending single malt from Scotland and grain whiskey from Canada. Its aging in Spanish oak barrels takes place in Japan.

The name comes from the tunnel located in the city of Togouchi, which merged with two other cities to create a larger city called Akiota.   The maturation of this whisky takes place in a strange way: in an abandoned railway tunnel. The 361-metre long tunnel was drilled in 1970 by the Japanese railway company JR, to extend the line from Kabe to Hamada in Shimane. The project will never become a reality and Chugoku Jozo finds an alternative use thanks to its ideal conditions for aging whiskies and shochu: a constant temperature of 14°C and a humidity of 80%.

Chugoku Jozo was founded in 1918 near the city of Hiroshima. At the time, they were producers of sake and shochu (Japanese vodka).  In 1990, they decided to add whisky to their product range. This is the start of their search for malt whisky from Scotland and grain whisky from Canada. The aging and blending are handled by their master “blend”.
