STROPPIANA DOLCETTO D'ALBA 75cl / 13 %

The grapes are harvested in mid-September and undergo gentle pressing. The must ferments on the skins for about 10 days at a controlled temperature not exceeding 30°C. It is reheated at least 4 times a day to fully extract the characteristic ruby red colour with violet reflections and tannins.

At the end of fermentation, the wine is transferred to steel vats for extraction with frequent decanting. This is where malolactic fermentation takes place. The wine is bottled in summer when it is warm and is sold after a month in bottle.

Ideal with dishes such as tagliatelle with chicken, rabbit with wine and game. Also exceptional with aged cheeses.
