The 2019 Tio Pepe Fino En Rama is the special selection of the cellar master with a limited number of barrels reserved for this particular cuvée.

Tio pepe fino en rama is made from Palomino Fino grapes from the Jerez Superior region. The vines of the estate are harvested by hand. The harvested fruit is transported in a 15kg box to preserve the grapes and thus avoid a start of fermentation before reaching the cellar.

The rennet is gently made to obtain a yellow must. It is then fermented in steel tanks for a controlled temperature. The must is processed into several wines, such as olorosos or finos. The Tio pepe fino en rama is a blend of these different wines, aged one year in American oak barrels. Then, for 5 years, he joined the system of criaderas and solera.

This intense, expressive and fresh Spanish wine recalls the awakening of spring.
