This Sancerre PDO a red wine made from 100% Pinot Noir.
The grapes are destemmed and sorted to macerate the finest berries, which then undergo 72 hours of cold, sulfite-free pre-fermentation maceration.
Part of this wine is aged in stainless steel vats, while the rest spends 9 months in oak barrels. It undergoes malolactic fermentation, allowing it to become rounder and more refined.
